Recipe Collection: Chicken Asparagus Bake

The recipe, from the HCG Diet Gourmet Cookbook, calls for the asparagus to be cooked with the chicken. It was a little too soft for me, so next time I will cook the chicken in the oven, and steam the asparagus separately.

Chicken Asparagus Bake:

100 grams (3.5 oz) chicken cubed
1 1/2 cups asparagus chopped
1/2 cup chicken broth
1 clove garlic minced
2 tbsp onion chopped

Combine all of the above in a baking dish.  Add salt and pepper to taste.  Bake at 375 for 30 minutes.  Optional toppings after cooking:  1 Melba Toast crushed and/or a sprinkle of paprika. 

I opted to eat a grissini on the side instead of the melba toast topping, and the paprika did add to the presentation.

I doubled the recipe to make two servings
