Recipe Collection: Rosemary Chicken

The Rosemary Chicken got 2 thumbs up from my husband, and I thought it was pretty good as well.  Recipe is below. 

Rosemary Chicken

100 grams chicken breast, thick sliced or whole
3 tbsp lemon juice (about the juice of 1/2 large lemon)
1/2 tsp fresh rosemary
1 serving Melba Toast, crushed into crumbs
1/4 tsp onion powder
1/4 tsp garlic powder
Salt and pepper to taste
1/4 cup chicken broth

Marinate the chicken in the lemon juice, rosemary and salt to taste.
Mix onion powder, garlic powder, a little salt and pepper with the melba toast crumbs.
Place crumb mix on a small plate, and coat the chicken with it on both sides.  Place chicken in a baking dish.  Pour in chicken broth along side the chicken.  Add any remaining crumb mix to the top of the chicken.  Bake at 350 for 20-30 minutes depending on thickness of meat.

If presentation is your thing, you can serve with lemon slices, and some fresh parsley.
