Atkins Induction Day 3 - Then end of posts, not the diet.

I've decided to forego my daily updates on my weight loss.  I'm getting too focused on the numbers and then getting discouraged.  I've elected to follow the Atkins Plan, and weigh myself just once a week, and focus more on measurements. 

What I will do is share any recipes I come across that I think are good.  Here's one to try if you are looking for something a little different.  Net carb count is 2.4 grams for 1 egg.  If you serve atop a few slices of avocado, add in 0.6 - 1 net carbs, depending on how thick you slice it. (Figure 1/2 of a hass avocado is about 2.1 net carbs)

Cheese Baked Eggs (from Dr Atkin's New Diet Cookbook)

2 eggs at room temperature
2 tbsp grated parmesan cheese
2 tsp butter
2 tbsp heavy cream
Salt and pepper to taste

Fill a baking dish with boiling water.  Place 1 tsp butter in each of 2 custard cups.  Gently crack one egg into each cup.  Top each egg with 1 tbsp heavy cream.  Top this with 1 tbsp cheese in each cup.

Bake at 375 for 10 - 12 minutes.

I served this atop 3 slices of avocado.  Very yummy, but kind of a pain to make.  It's hard to pick up the custard cups once they are hot.
